Coconut Macaroon Pie

"Love coconut macaroons? You'll love this version in a pie form."

Ingredients :

  • 1/2 cup chopped pecans
  • 1 recipe pastry for a 9 inch single crust pie
  • 1/2 cup butter, melted
  • 1 1/2 cups flaked coconut
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1/4 cup all-purpose flour
  • 1 1/2 cups white sugar
  • 2 eggs

Instructions :

Prep : Cook : 8M Ready in :
  • Preheat oven to 325 degrees F (165 degrees C).
  • Place pecans in bottom of pie shell.
  • Combine melted butter, coconut, salt, water, flour, sugar, and slightly beaten eggs. Pour filling over pecans in crust.
  • Bake for 45 minutes, or until golden brown. Cool before serving.
