This is a nice way to have the flavour of chili without always using red meat. This can also be served as a filling for tacos!
Ingredients :
- 3 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 onion, chopped
- 1 stalk celery, sliced
- ¼ pound mushrooms, chopped
- 1 pound skinless, boneless chicken breast halves - cut into bite size pieces
- 1 tablespoon chili powder
- 1 teaspoon dried oregano
- 1 teaspoon ground cumin
- ½ teaspoon paprika
- ½ teaspoon cocoa powder
- ¼ teaspoon salt
- 1 pinch crushed red pepper flakes
- 1 pinch ground black pepper
- 1 (14.5 ounce) can whole peeled tomatoes with juice
- 1 (19 ounce) can kidney beans, drained and rinsed
